Isoamyl Alcohol (also known as Isopentyl alcohol) is a colorless liquid with the formula (CH3)2CHCH2CH2OH. It is one of several isomers of amyl alcohol. It is an ingredient in the production of banana oil, an ester found in nature and also produced as a flavouring in industry. It is a common fusel alcohol, produced as a major by-product of ethanol fermentation. It is also an ingredient of Kovac's reagent, used for the bacterial diagnostic indole test.
It is also used as an antifoaming agent in the chloroform:isomyl alcohol reagent.
Isoamyl alcohol is used in a phenol–chloroform extraction mixed with the chloroform to further inhibit RNase activity and prevent solubility of RNAs with long tracts of poly-adenine.

• Isoamyl alcohol is used as a solvent for the preparation of synthetic fruit flavours, such as apricot, banana, cheery, greengage, malt, orange, plum and whiskey flavours, and is a raw material in the production of synthetic banana oil. Iso-Valeraldehyde has a pungent, penetrating odor that is quintessentially malty. The most obvious comparisons are with n-valeraldehyde and 2-methyl butyraldehyde . All three chemicals have closely related odor profiles, but from my experience, n-valeraldehyde is notably harsher in use than Iso-Valerald­ehyde. 2-Methyl butyraldehyde is much more interesting than n-valeraldehyde and is certainly a valid alternative, but I feel it is less impactful in most flavor types.

Product Application:

• As it stems from leucine, the occurrence of iso valeraldehyde is not limited to beer; the compound has found to be a flavor component in many different types of foods. It is described as having a malty flavor and has been found in such foods as beer, cheese, coffee, chicken, fish, chocolate, olive oil, and tea.
• The compound is used as a reactant in the synthesis of a number of compounds. Notably it is used to synthesize 2,3-dimethyl-2-butene, and is then converted to 2,3-dimethylbutane-2,3-diol and methyltert-butylketone, better known as pinacolone. Pinacolone itself is then used in synthesis for number of pesticides. Additionally, a range of pharmaceuticals, such as butizide, are synthesized from isovaleraldehyde and its corresponding acid.

Iso Propyl Acetate is an ester, an organic compound which is the product of esterification of acetic acid and isopropanol. It is a clear, colorless liquid with a characteristic fruity odor. Isopropyl acetate is a solvent with a wide variety of manufacturing uses that is miscible with most other organic solvents, and moderately soluble in water. It is used as a solvent for cellulose, plastics, oil and fats. It is a component of some printing inks and perfumes.
Isopropyl acetate decomposes slowly on contact with steel in the presence of air, producing acetic acid and isopropanol.
